Chocolate peanut butter pretzel truffles

What a name, it's a mouthful. And once you try these you will have a full mouth!
Everyone loved these. By everyone, I mean my my kids, one friend who was lucky enough that I shared, and myself.
I found the recipe on Pinterest, which is where I find a good portion of my recipes these days. It was linked to Six Sisters' Stuff for the recipe, which credited another site, which, in turn credited another. Good stuff travels fast!
I modified the recipe by using a chocolate coating instead of melted chocolate chips with shortening, I never like how the results of that end up.

Chocolate Peanut Butter Pretzel Truffles

Makes about 18 truffles.

1½ cups crushed pretzels
½ cup creamy peanut butter
1 tablespoon unsalted butter, at room temperature
2 tablespoons light brown sugar
Pinch of salt (optional)
3 tablespoons powdered sugar
chocolate candy coating (Wilton Candy Melts or CandiQuik)

1. Put your pretzels into a resealable plastic bag and crush into tiny bits, a rolling pin is helpful, and it lets you take out some aggression ; )
2. In a small bowl, combine the peanut butter, butter, brown sugar and salt (if desired.) Stir until all of the ingredients are completely blended & smooth. Stir in the pretzel bits and mix thoroughly. Add the powdered sugar and mix until completely combined.
3. Line a baking sheet with wax paper. Shape into a bite sized balls. Place the balls on the wax paper lined cookie sheet. One you have them all made, chill them in the refrigerator for at 30 minutes.
4. When ready to dip the truffles, microwave the chocolate coating according to directions, until completely melted and smooth.
5. Working one at a time, dip one peanut butter-pretzel ball into the melted chocolate and coat it completely using a fork to help cover it. Using the fork (and maybe a toothpick to help push it off of the fork, put it back on the wax paper lined sheet. Repeat with all of the peanut butter pretzel balls.
6. One the coating is set, garnish with a drizzle of melted peanut butter and crushed pretzels, if desired.

Enjoy! Try not to eat them all in one sitting, but I won't tell if you do.

no-bake Strawberry Milk Cheesecake

I saw a pin on Pinterest today, for a no-bake Strawberry Milk Cheesecake.
I knew I had to make it. I couldn't wait. I ran to the store to grab a few things for it and came home to get to work.

The recipe came from Sprinkle Bakes, you can go there for all of the details if you're interested.

Apples in my Oven

The other night we made some baked apples. They are such an easy and tasty dessert!

We started out by coring our apples, this was started with a paring knife and finished with a spoon. Then I grabbed the brown sugar, cinnamon, oats, raisins, and granola and let everyone make their own.

Mine had everything that I just mentioned, minus the granola. The kids used the granola, and one was against the raisins.

My husband's baked apple? Don't ask. No, really, don't.

I suppose I should have taken a photo of it. Though, at the time I wasn't thinking of blogging, I was just ashamed of his apple, didn't want anyone to see that horrendous thing!

Fine. He also used all of the above mentioned ingredients. Plus; honey (which might have led to one of the kids adding it as well,) a few pretzel sticks, a leftover Candy Cane Hershey's Kiss, and a few popcorn kernels, just because. Really it was quite the piece of art. The popcorn didn't pop, in case you were wondering, and the pretzels that were pushed into the apple got soggy, but I hear that the Kiss was wonderful.

They baked in a 350 degree oven for about an hour.

Here is a photo of the pretty baked apple: Mine.

Apple Pie in a Glass

I saw a several posts for apple cider floats on Pinterest recently. I could not get the thought out of my mind. I had to have one.

The basic idea is to take Apple cider, ginger ale, and ice cream to make a float.
The measurements are to your liking. You might want a little more fizz, so add extra ginger ale. Like a stronger apple flavor? Add more cider than soda.
You can warm up the cider, like I did, to make the ice cream a little melty and the drink more suited for a cold Winter's night. Or you can keep the cider cold. This whole drink is up to what your tastes are.
I could not make this without caramel ice cream topping drizzled (heavily) on top. You can also sprinkle a little cinnamon or nutmeg on top.
Experiment and find out how you like it best. Maybe you'll like it many ways, and in that case you have a good reason to drink a lot of this!

I'm not much of a blogger & Chocolate Strawberry Shortcake

I don't think blogging is my thing. Really. I start out with a blog and realize that I'm not much of a writer, and it all goes downhill from there. Yet here I am, giving it another shot.

Not too long ago I made a chocolate strawberry shortcake and it was really good! I'm not a huge chocolate fan *gasp* I know, but I'm not. I like it, it's just not a favorite, at least not as far as baked goods, but hand me some chocolate candy and I'll be happy.
Anyway, back to the shortcake..

It was really good! I didn't finish all of the biscuit, though. I found the recipe through Pinterest, of course, because we all know that it's the place to go these days when you're looking for something tasty or crafty to make!
If you'd like to make the Chocolate Strawberry Shortcake for yourself, the recipe can be found at Rock Recipes.
